Chicken Salad with Apples and Walnuts
2 Servings | Prep-time: 10 minutes | Cook-time: n/a
Ingredients:
1 boneless, skinless chicken breast, grilled*
8 cups green leafy lettuce
2 ribs celery
1/2 large green apple
1 ounce chopped walnuts
2 tablespoons raisins
1/4 cup low-fat Italian dressing
Instructions
1)Wash and dry lettuce and place onto two separate plates, or into two portable containers. Chop chicken breast into small cubes and distribute evenly between the two salads.
2)Slice celery into thin pieces, chop apple into bit-sized pieces and add half the celery, half the apple, and half the walnuts onto each salad. Top with 1 tablespoons raisins each.
3)Drizzle over 2 tablespoons Italian dressing when you are ready to serve, if you are taking for lunch make sure to keep dressing on the side until ready to eat to keep the salad from becoming soggy.
*You can buy pre-cooked grilled chicken breasts at most grocery stores, or follow the directions from recipe #1 to grill the chicken breasts yourself.
